Veggie Pizza Cupcakes:
A Fun Kitchen Activity for Kids 🍕🥦
The kiddos were stuck in the kitchen with me today while I was busy getting things done, so I decided to turn lunch into a fun cooking activity!
I handed them the ingredients and let them take the lead while I supervised. We sprayed a muffin tin with nonstick cooking spray and pressed refrigerated biscuits into the bottom of each cup. While my youngest worked on filling the muffin tin, my oldest chopped up broccoli into small pieces (with a little help from Mom, of course!).
We steamed the broccoli until it was nice and tender, then mixed it with marinara sauce. The kids spooned the broccoli mixture into each biscuit cup before covering it with another piece of biscuit dough. I popped them into the oven, sprinkled shredded cheese over the top, and about 10 minutes later lunch was ready!
They came out looking like adorable little pizza cupcakes, and everyone absolutely loved them. The kids were so proud that they made their own individual pizza bakes, and I loved that they were sneaking in some veggies without a single complaint. This is definitely a recipe we'll be making again!
