Easy Crockpot Mississippi Chicken

The Crockpot Dinner My 6-Year-Old Made

Dinner was so simple that my 6-year-old made most of it herself.

She proudly helped add everything to the crockpot, and by dinnertime we had a meal that the entire family loved.

The recipe couldn't be easier, which makes it perfect for busy weeknights and little kitchen helpers.

Easy Crockpot Mississippi Chicken

Ingredients

  • 2–3 pounds boneless, skinless chicken breasts

  • 1 packet ranch seasoning mix

  • 1 packet au jus gravy mix

  • ½ cup water

  • ½ cup (1 stick) butter

  • 6–10 pepperoncini peppers (plus a splash of the juice if desired)

Directions

  1. Place the chicken breasts in the bottom of your crockpot.

  2. Sprinkle the ranch seasoning and au jus mix evenly over the chicken.

  3. Add the butter on top.

  4. Pour in the water.

  5. Add the pepperoncinis.

  6. Cover and cook on low for 6–8 hours or high for 3–4 hours.

  7. Once the chicken is tender, shred it with two forks and stir everything together.

  8. That's it!

Serve It Your Way

One of the reasons this meal was such a hit is that everyone could enjoy it differently.

  • Serve it on sandwich buns for an easy shredded chicken sandwich.

  • Spoon it over egg noodles for a hearty comfort meal.

  • Enjoy it plain for a simple, protein-packed dinner.

  • Add it to mashed potatoes, rice, or even wraps.

Tonight, my kids chose a little bit of everything.

Some piled their chicken onto sandwiches, some ate it plain, and a couple of them enjoyed it over egg noodles.

Somehow everyone left the table happy, which any parent knows is a victory worth celebrating.

Why I Love This Recipe

Besides being delicious, this recipe is:

  • Kid-friendly

  • Budget-friendly

  • Great for busy days

  • Easy enough for young children to help make

  • Perfect for feeding a family with different preferences

The best part wasn't even the meal itself. It was watching my 6-year-old proudly tell everyone, "I made dinner!"

Sometimes the simplest recipes become the ones your family asks for again and again. This one is definitely making its way into our regular dinner rotation.
